These molds will help you create perfectly shaped nut-shaped cookies from delicate dough. Before filling the mold with dough, grease it with butter. Press the dough into the mold. To achieve classic unfilled cookies, press the dough even with the edges of the mold. If you only press the dough to the sides, you will create a gentle indentation, allowing you to fill the cookies with creams and stick them together. You can coat the glued cookies with chocolate or rum glaze.

Recipe for Vanilla Cookies
260 g all-purpose flour
200 g butter
100 g powdered sugar
100 g ground hazelnuts
1 egg yolk
vanilla sugar.
Prepare the dough and let it rest in the refrigerator for at least an hour. Then shape the cookies, ideally using the reversible mold. Place them on a greased baking sheet or one lined with baking paper. This batch should yield about 2.5 trays of cookies. Bake slowly to prevent the nuts in the cookies from burning, which would make them bitter. While still hot, coat the baked cookies in a mixture of powdered sugar and vanilla sugar. Store in a box in a cool place.
